I had a chance to check out Three Birds Restaurant before they open to the public on June 17, 2025. Check out this amazing new ‘neighborhood perch.’

The Place

Most recently, this gorgeous mid-century modern building was unrecognizable as Carmel’s. Three Birds has done an amazing job restoring this gem of a property back to full lustre. Originally, it housed the famous Parkmoor restaurant, where you parked and servers on roller skates would bring your order to your window.

Now, Three Birds has transformed this building into a light, airy diner with white terrazzo floors, subway tile, sage green furnishings, light wood tables, and enormous picture windows that overlook a dreamy patio straight out of a Wes Anderson film.

The Food

The menu is super accessible to just about anyone’s palate and features smash burgers and fries (the fries are amazing and they perfect them using a special, three-day process), rotisserie chicken, pastas, salads, and more.

There are a few vegetarian options but vegans will have to get a little more creative. I had the white bean hummus for an appetizer and for lunch, I had cavatappi cruda without cheese, making the dish vegan. They were so easy to work with to make sure I was getting a vegan meal.

The hummus was amazing and I loved the variety of veggies that come with it. The pasta was smokey and delicious. My boyfriend got the veggie burger and thought it was fantastic. The burger is made in-house and it has a pistachio gremolata vinaigrette, whipped farmer’s cheese, and arugula.

The cocktail menu features several lighter-flavor drinks to match the decor. I tried the Pink Noise and loved it. It was absolutely perfect and had strawberry-rosemary gin, cardamom, and mint garnish. They also are the first place where I’ve seen Garage Beer on draft.
