I was thinking about breweries in Dayton and realized I still have a few to try and one that I’ve been excited to visit is Carillon Brewing Company. The food is great, the beer is awesome, but best of all:  Carillon Brewing Company is a recreation of a 1850s brewery so it looks and feels like stepping back in time.  It’s even part of Carillon Historical Park so you’re not just drinking beer, you’re learning about history.

The decor is the most obvious throw back – they used a very simple style, which is exactly how you would imagine a restaurant from 1850 would look.

What really intrigued me was that the beer is brewed using recipes and methods from 1850.  They use wood barrels and a wood fire, the grains that would have been popular to use in beer at the time, and the recipes a real 1850 brewery would have used.

Despite serving a mostly German menu, there were plenty of vegetarian dishes available for my husband and I to enjoy – even vegetarian sauerkraut!

Everything was exactly what I hoped it would be!  I loved my experience at Carillon Brewing Company and can’t wait to visit again soon – especially since they just opened their beer garden outdoor seating area.  Oh, and Dayton History just won Institution of the Year because of Carillon Brewing Company!  Congratulations!
